Back to the source: the perfect Provencal appetizer

To extend the summer, what better than to treat yourself to a special shared moment enjoying an appetizer with Provencal flavours? L'Occitane reveals some authentic regional recipes for finger food that your friends and family will love.

Recipe for tapenade

Ingredients: 300g pitted black olives  100g capers in vinegar 4 tbsp. olive oil  5 anchovy fillets in oil ground black pepper  dash of lemon juice  1 clove garlic  thyme

1. Peel and finely chop the garlic. Next drain the capers and rub the anchovies dry with kitchen paper.

2. Place the pitted olives, chopped garlic, anchovies and capers into your blender bowl. Blend everything until the mixture is reduced to a purée.

3. Next add the olive oil, dash of lemon juice and thyme, before blending it again to obtain a soft paste.

4. Season with pepper and stir your mixture. Then pour into small terracotta pots and refrigerate.

5. To prepare your appetizer, spread the tapenade onto small slices of toast. Serve.

Recipe for anchoïade

Ingredients: 300g anchovy fillets in oil  1 clove garlic  10 tbsp. olive oil  1 tbsp. wine vinegar  1 tbsp. capers  ground pepper

1. Pat the anchovies dry with kitchen paper and remove their bones. Next, drain the capers and peel the garlic.

2. Place the anchovies, capers, vinegar and chopped garlic into your blender bowl. Blend everything until the mixture is reduced to a purée.

3. Next, add the olive oil gradually, and beat to the consistency of mayonnaise.

4. Season with pepper and stir your mixture. Then pour into small terracotta pots and refrigerate.

5. For your aperitif, serve the anchoïade with raw vegetable dipping sticks of your choice: celery, cucumber, carrot, cauliflower, etc. Serve.

Tips:

- Avoid adding salt to your mixture: the capers and anchovies are naturally salty already.

- Prepare the tapenade and anchoïade the day before you plan to serve your appetizer to allow the flavours to meld together more intensely overnight.
